So, are the cherries dried?

They aren't part of the biscuit. Instead, the chocolate chip biscuit is filled with fresh-pitted brandied cherries.

Is it more for breakfast or dessert?

I would say dessert, but when something tastes this good you can eat it any time of day.

How'd you come up with the idea?

Market Square is hosting a big biscuit festival [International Biscuit Festival, June 5] and I was trying to come up with an idea to help promote it. We had been doing strawberry shortcake with biscuits, and since cherries are in season, I thought, "Let's do cherries."

Have you seen other chocolate chip biscuits?

I have not, but I'm sure someone else has done it. I love chocolate, so any time I can put chocolate into something, I do.

Did it take a lot of tries to get it right?

We made about four or five different batches using a basic biscuit recipe, which we had to alter a little bit.

Any dissenters on the final product?

No. But a lot of people who work here are poor college students, so they're thrilled to eat anything for free. The biscuits are pretty darn good though.

How long will you have them?

We're showcasing them through the month of June to publicize the biscuit festival.

We're not even going to talk about calories, are we?

No. No, no, no, no, no.

Will the recipe be a closely guarded secret?

Part of the contest for the Signature Biscuit is writing out the recipe, so yeah, I am giving out the recipe at the biscuit festival. But you know how it is. You can have the recipe, but if you don't have the touch...
