Shawn Hines has been hitting the road with his catering act the past six years, but he’s ready to give Knoxville the same benefits that up until now have mostly been lavished on touring rock and roll clients such as Taylor Swift, Keith Urban, and Willie Nelson. “The Truckin’ Chef, my rock ’n’ roll tour catering company, has been on the road with performers like Alison Krauss and pretty much hit every state east of the Mississippi and as far north as Pennsylvania,” he says. “We’re not new, we’ve been around taking care of the nicest people—and now we’re focusing on the Knoxville market, too.”
Mainstays of Hines’ in-town work will be wedding and corporate catering, with the possibility to stage events at his Chef’s Table Event Center in West Knoxville, a 5,000 square foot facility with two separate meeting rooms that can accommodate groups as large as a corporate party and as intimate as rehearsal dinners. The chefs he employs have national reputations from cooking on tour. “We can do pretty much anything you can imagine,” says Hines, “from all-organic vegan fare to beans and barbecue.”
The key to his company’s success, says Hines, is service. “Rock and rollers can get registered chefs all over the country, but they pay our outfit in Knoxville, Tenn. to travel there. Obviously we have great food, but it’s the great service that draws those tour clients. We make everyone feel comfortable and take care of everybody.”
Hines looks forward to lavishing the same TLC on in-town clients. “I started out in humble beginnings out of a garage and personal kitchen and now I own a decent-sized catering company with jobs throughout the Southeast,” he says. “But we’ve been Knoxville’s best-kept secret.” Until now.
