Located in the Knoxville Visitor Center, the Coop Cafe is an offshoot of Ms. Cock-a-Doodles’ catering. There are breakfast choices, desserts, and a full lunch menu that includes her gourmet chicken salad flavors including tarragon, basil artichoke, curry cranberry pecan, and several more as well as paninis, salads, and soups. The Southwestern chicken salad—with black beans and corn—won’t satisfy a chicken salad craving, but if you’re in the mood for something different, it’s delicious.
