Cilantro's Grill boasts itself as being a healthier alternative to Southwestern-style food. Everything is made from scratch -- be it staples like burritos, nachos or tacos. The mom-and-pop restaurant uses certified Angus beef and grade-A, white-meat chicken. The restaurant's Richard Kilgore asks patrons of the restaurant, which just opened April 1 on The Strip, to "try us one time, and they'll be hooked."
