With mushroom fiends like intrepid forager Whitey Hitchcock and grow-your-own advocate Bob Hess of Everything Mushrooms acting as evangelists (plus a major producer like Monterey in our own back yard), mushrooms are, well, mushrooming into a genuine Knoxville food trend.
