What makes it special?

You know you’re in for a good time when the barkeep whips out a rasp. It’s an unlikely bar tool, perhaps, but if you’re going to go to all the bother of making this labor-intensive classic cocktail and then top it with fresh nutmeg, the rasp is essential. It’s a beautiful libation that’s snowy white and fluffy, and its appearance might summon thoughts of egg nog. The first waft of cream and nutmeg may deepen that impression—at least until the fascinating wave of lively citrus and juniper strike your nose.

Despite the egg and dairy, the texture remains light owing to the lime and orange elements and the good shaking that creates the froth. Flavor recollections could include a Tom Collins without the sharp edge. But this old drink—it dates to 1888—has a unique flavor all its own that’s quite difficult to pin down; it’s gin, yes, but it’s also an array of associations like key lime pie, Creamsicle, and Christmas. Appropriately, it’s served in a snifter, a glass that invites one to swirl, sniff, and ponder.
