La Costa on Market Square usually does a menu change for each season, but this is a little more radical: Now the restaurant will be changing names, to 31 Bistro, and amping the concept to become purely farm-to-table.
“Market Square has so many Mexican or Latin type places already and we wanted to do something that allowed us more freedom,” says Dan Brittain, who co-owns the venue with his wife Sabrina. “We have already worked hard with several local farmers and vendors to procure produce and meat, and see this as a way to promote the ‘eat local’ movement.”
