Knoxville needs a food truck scene! We’ve finally started catching up to other cities with some really great bars and restaurants serving local foods, and we’ve shown that Knoxvillians love new culinary endeavors. I’d love to see food trucks downtown and on Market Square—of course, I’m biased, as I’m currently planning on opening a fried pie food truck in 2013.
